    4 lbs.Yukon gold potatoes, peeled and cubed
    Hy-Vee salt, as needed
    ½ lbs.Hy-Vee unsalted butter, plus additional for garnish
    2 tbsp.minced garlic
    2shallots, chopped
    12 oz.cooked lobster meat
    1 pt.heavy cream
    3 tbsp.minced thyme leaves, plus additional for garnish
    2 tbsp.kosher salt
    2 tsp.Hy-Vee black pepper

      Directions

      1. In a large stockpot, cover potatoes with cold water and season with salt. Bring to a boil and simmer until soft, about 20 minutes. Drain and mash until desired consistency.

      2. Meanwhile, in a medium saucepan melt butter. Add garlic and shallots and cook for 5 minutes. Add lobster meat and cream; simmer for 5 minutes. Add thyme, kosher salt and black pepper.
      3. Slowly add cream and lobster mixture to mashed potatoes, stirring until thoroughly incorporated.
      4. Garnish with additional minced thyme and butter, if desired, before serving.
