- Meanwhile, in a medium saucepan melt butter. Add garlic and shallots and cook for 5 minutes. Add lobster meat and cream; simmer for 5 minutes. Add thyme, kosher salt and black pepper.
- Slowly add cream and lobster mixture to mashed potatoes, stirring until thoroughly incorporated.
- Garnish with additional minced thyme and butter, if desired, before serving.
