3 medium sweet potatoes, scrubbed
½ c. Hy-Vee miniature marshmallows
2 tbsp. Hy-Vee unsalted butter
2 tbsp. Hy-Vee brown sugar, packed
2 tbsp. Hy-Vee finely chopped pecans
2 tbsp. Hy-Vee 100% pure maple syrup

  • Medium bowl
  • Potato masher

Directions

  1. Preheat oven to 350 degrees. Line a large baking sheet with foil and spray with nonstick cooking spray. 

  2. Prick potatoes with a fork. Bake whole sweet potatoes 45 minutes to 1 hour or until softened. Remove from oven and cool slightly.

  3. Preheat oven to HIGH on the broiler setting. Slice sweet potatoes in half lengthwise. Scoop out most of potato flesh, leaving 1/4-inch attached to potato skin. Mash potato pulp in a medium bowl with butter. 

  4. Divide mashed potato mixture into potato skin halves on baking sheet and sprinkle with brown sugar and pecans. Top with marshmallows and broil until marshmallows are toasted, about 1 minute, being careful not to burn. Drizzle potatoes with maple syrup and serve immediately.
