1 ½ lbs. sweet potatoes, about 2 medium
2 tbsp. Hy-Vee cornstarch
1 tsp. Hy-Vee cayenne pepper
½ tsp. kosher salt
⅓ c. Hy-Vee mayonnaise
2 tbsp. spicy ketchup

Directions

  1. Preheat oven to 425 degrees. Line two baking sheets with foil. Brush foil with 1 tablespoon oil. Set baking sheets aside. 

  2. Peel potatoes; cut in 1/4-inch strips and place in a large bowl. Drizzle with remaining 2 tablespoons oil. Combine cornstarch, cayenne pepper, and salt; sprinkle over potatoes and toss to coat.

  3. Arrange sweet potato strips on prepared baking sheets. Bake for 30 minutes or until tender and browned on the edges, turning once halfway through.

  4. Whisk together mayonnaise and spicy ketchup in a small bowl. Serve with fries.
