¾ c. milk
¾ c. margarine, divided, softened
3 large eggs, beaten
1 ½ c. granulated sugar
1 tsp. vanilla
2 tsp. baking powder
½ tsp. salt
1 ½ c. flour
1 ½ c. coconut
1 c. brown sugar
6 tbsp. half-and-half


  1. Combine milk and 1/2 cup margarine in saucepan. Heat until margarine melts. Let cool.
  2. In mixing bowl, beat eggs and granulated sugar. Slowly add vanilla. Beat in baking powder and salt.
  3. Add milk mixture to creamed mixture alternately with flour. Beat well.
  4. Bake in a 9-by-13-inch pan at 350 degrees for 25 to 30 minutes.
  5. Combine 1/4 cup margarine, coconut, brown sugar and half-and-half in saucepan. Bring to a boil. Spread on top of cake. Broil until light brown.
