¾ c. margarine, divided, softened | ||

1 ½ c. granulated sugar | ||

2 tsp. baking powder | ||

1 ½ c. flour | ||
1 ½ c. coconut | ||
1 c. brown sugar | ||
6 tbsp. half-and-half |
Directions
- Combine milk and 1/2 cup margarine in saucepan. Heat until margarine melts. Let cool.
- In mixing bowl, beat eggs and granulated sugar. Slowly add vanilla. Beat in baking powder and salt.
- Add milk mixture to creamed mixture alternately with flour. Beat well.
- Bake in a 9-by-13-inch pan at 350 degrees for 25 to 30 minutes.
- Combine 1/4 cup margarine, coconut, brown sugar and half-and-half in saucepan. Bring to a boil. Spread on top of cake. Broil until light brown.
