| 1 ½ c. margarine, softened, divided | ||
| 1 ¾ c. sugar | ||
| 2 c. flour | ||
| 5 tbsp. cocoa, divided | ||
| 1 tsp. baking soda | ||
| 1 tsp. vanilla | ||
| 2 large eggs | ||
| ½ c. buttermilk | ||
| 1 ⅓ c. Pepsi cola, divided | ||
| 1 ½ c. miniature marshmallows | ||
| 4 c. powdered sugar |
Directions
- Preheat oven to 350 degrees. Grease and flour 9-by-13-inch cake pan.
- Mix together 1 cup margarine, white sugar, flour, 2 tablespoons cocoa, baking soda, vanilla, eggs and buttermilk. Add 1 cup Pepsi and marshmallows. Pour into prepared pan.
- Bake for 40 to 45 minutes. Cool. Spread with Pepsi Frosting.
- To make Pepsi Frosting, mix together 1/2 cup margarine, 3 tablespoons cocoa, powdered sugar and 1/3 cup Pepsi.
