Servings and Ingredients
|3 lbs.||pork, cut in small pieces|
|2||(10 oz each) cans tomatoes with chilies|
|1||(12 oz) can tomato sauce|
|⅛ tsp.||garlic powder|
|salt and pepper, to taste|
|1 c.||shredded cheddar cheese|
|refried beans, for serving|
- Brown pork in a large saucepan or Dutch oven. Stir in canned tomatoes, tomato sauce, garlic powder, salt and pepper. Simmer for 1 hour or until meat is tender.
- Meanwhile, prepare rice. Place on a serving plate.
- Top rice with meat sauce. Sprinkle with cheese.
- Serve refried beans as a side dish, if desired.
