1 c. Hy-Vee unsweetened 100% cranberry apple juice
2 (8-oz.) pkg. Philadelphia original cream cheese (2 blocks)
½ tsp. Weber KC BBQ rub
½ tsp. Rufus Teague steak rub
Red pepper jelly, for serving
Assorted crackers or chips, for serving

  • Small rimmed baking pan
  • Hy-Vee nonstick cooking spray

Directions

  1. Combine wood chips and juice in a medium microwave-safe bowl. Microwave on HIGH for 2 to 2-1/2 minutes or until juice begins to boil. Remove from microwave. Let chips soak for 1 hour. Drain wood chips; discard juice.

  2. Place wood chips on one-half of a 16x12-in. double sheet of heavy foil. Fold other half over to cover wood chips. Seal edges tightly with a double fold. Place packet in a small metal pan. Poke holes in top of packet to allow smoke to come out.

  3. Preheat a charcoal or gas grill with two grilling zones: direct grilling over medium heat (350 degrees) and indirect grilling over low heat (250 degrees). Place metal pan directly over medium heat. Cover grill.

  4. Line a small rimmed baking pan with foil. Spray with nonstick spray. Place the cream cheese blocks in the prepared pan. Score the tops of the cream cheese blocks with a sharp knife in a diamond pattern, about 1/2-in. deep. Evenly sprinkle the BBQ rub over the top of one block and steak rub over the top of the remaining block of the cream cheese. Set aside.

  5. When chips begin to smoke, place baking pan with cream cheese on grill rack over indirect heat. Cover grill and smoke for 1-1/2 to 1-3/4 hours, until desired smokiness.

  6. Remove from the grill. Transfer cheese blocks to a serving platter. Serve with jelly and assorted crackers.
