    2 ½ c. Hy-Vee shredded sharp Cheddar cheese
    1 ½ c. Hy-Vee finely shredded Swiss cheese
    1 tbsp. Hy-Vee all-purpose flour
    1 tsp. Gustare Vita olive oil
    2 (3-oz.) Hy-Vee skinless beer bratwurst
    1 c. Hy-Vee evaporated milk
    1 c. amber ale
    1 tbsp. Hy-Vee stone ground Dijon mustard
    Green onions, sliced; for garnish

    Directions

    1. Place oven rack 6 inches from heat. Preheat broiler to HIGH. Separate tops from bottoms of brat buns; cut each into 4 pieces to make 24 pieces total. Place on a large rimmed baking pan. Lightly spray both sides of bun pieces with nonstick cooking spray. Broil 3 to 4 minutes or until toasted; cool.

    2. Toss together Cheddar cheese, Swiss cheese, and flour in a medium bowl; set aside.

    3. Heat olive oil in a 10-inch cast-iron skillet over medium-high heat. Add bratwurst. Cook until brown (165 degrees), stirring and breaking into crumbles. Remove half of the crumbles and set aside.

    4. Stir in evaporated milk, amber ale, and Dijon mustard to remaining bratwurst crumbles in skillet. Bring to a simmer; remove from heat. Whisk in cheese mixture until melted. Garnish with reserved bratwurst crumbles and sliced green onions, if desired. Serve immediately.
