Directions
Toss together Cheddar cheese, Swiss cheese, and flour in a medium bowl; set aside.
Heat olive oil in a 10-inch cast-iron skillet over medium-high heat. Add bratwurst. Cook until brown (165 degrees), stirring and breaking into crumbles. Remove half of the crumbles and set aside.
Stir in evaporated milk, amber ale, and Dijon mustard to remaining bratwurst crumbles in skillet. Bring to a simmer; remove from heat. Whisk in cheese mixture until melted. Garnish with reserved bratwurst crumbles and sliced green onions, if desired. Serve immediately.
