    ½ c. sliced fresh mushrooms
    1 tbsp. Hy-Vee Select olive oil
    2 tbsp. chopped green onion
    ¼ tsp. dry tarragon
    3 c. Hy-Vee chicken broth
    1 c. pearl barley

    Directions

    1. Saute mushrooms in olive oil over medium-high heat 2 to 3 minutes.
    2. Stir in onion, garlic and tarragon. Cook another 2 to 3 minutes.
    3. Pour in chicken broth and barley. Cover and reduce heat to medium-low.
    4. Simmer 45 minutes or until barley is tender and liquid is absorbed.
