2 tbsp. shallot, finely chopped
2 tbsp. Gustare Vita red wine vinegar
1 tsp. fresh lemon juice
1 tsp. Hy-Vee honey
1 tsp. fresh basil, finely chopped
1 tsp. fresh parsley, finely chopped
1 tsp. fresh thyme, finely chopped
Hy-Vee salt
Hy-Vee ground black pepper
¼ c. crumbled goat cheese
Additional fresh herbs, for garnish

Directions

  1. Add tomato slices and wedges in a shallow dish. Combine shallot, red wine vinegar, lemon juice, honey, basil, parsley, and thyme in a small bowl. Season with salt and black pepper. Toss with tomatoes in a shallow dish. Stir in goat cheese. Cover and refrigerate 2 hours. Garnish with additional fresh herbs, if desired.
