¼ c. chopped onion
¼ c. gluten-free margarine
6 eggs
½ c. half-and-half
½ c. grated American cheese
⅔ c. cooked rice
salt and pepper, to taste

Directions

  1. Cook onion in margarine until golden.
  2. In separate bowl, beat together eggs and half-and-half until foamy.
  3. Add cheese, rice, salt and pepper to the egg/milk mixture.
  4. Pour over cooked onion in pan.
  5. Cover and cook over low heat until set. Stir frequently.
