Gluten-Free Scrambled Eggs with Rice

¼ c. chopped onion | ||
¼ c. gluten-free margarine | ||
6 eggs | ||
½ c. half-and-half | ||
½ c. grated American cheese | ||
⅔ c. cooked rice | ||
salt and pepper, to taste |
Directions
- Cook onion in margarine until golden.
- In separate bowl, beat together eggs and half-and-half until foamy.
- Add cheese, rice, salt and pepper to the egg/milk mixture.
- Pour over cooked onion in pan.
- Cover and cook over low heat until set. Stir frequently.
