1 c. diced fresh mushrooms
2 tbsp. finely chopped red onion
4 Hy-Vee large eggs, beaten
Hy-Vee salt and Hy-Vee pepper, optional
1 Roma tomato, seeded and diced
2 c. hot, cooked brown rice
2 tbsp. shredded Parmesan cheese
2 tbsp. shredded fresh basil

Directions

  1. Heat a skillet over medium-high heat. Spray with non-stick cooking spray. Sauté mushrooms and onions.
  2. Reduce heat to medium-low. Add eggs, salt and pepper to taste. Cook and stir until almost set. Stir in tomatoes. Continue stirring until eggs are set.
  3. Serve eggs on a bed of rice. Sprinkle with Parmesan cheese and fresh basil.
