Italian Market Scrambled Eggs
Servings and Ingredients
|1 c. diced fresh mushrooms|
|2 tbsp. finely chopped red onion|
|4 Hy-Vee large eggs, beaten|
|Hy-Vee salt and Hy-Vee pepper, optional|
|1 Roma tomato, seeded and diced|
|2 c. hot, cooked brown rice|
|2 tbsp. shredded Parmesan cheese|
|2 tbsp. shredded fresh basil|
- Heat a skillet over medium-high heat. Spray with non-stick cooking spray. Sauté mushrooms and onions.
- Reduce heat to medium-low. Add eggs, salt and pepper to taste. Cook and stir until almost set. Stir in tomatoes. Continue stirring until eggs are set.
- Serve eggs on a bed of rice. Sprinkle with Parmesan cheese and fresh basil.
