    ½ c. chopped bell pepper
    1 tbsp. Hy-Vee unsalted butter
    8 Hy-Vee HealthMarket organic eggs
    2 tbsp. diced green onion
    ¼ c. Hy-Vee skim milk
    Hy-Vee salt and black pepper, to taste
    ½ c. Hy-Vee 2% milk shredded cheddar cheese

    Directions

    1. In a skillet, sauté bell pepper in butter.
    2. In large mixing bowl, beat eggs, green onion, milk, salt and pepper; add to skillet.
    3. Cook over medium heat until eggs are almost set, stirring occasionally.
    4. Sprinkle with cheese. Cover and cook until eggs are completely set and cheese is melted.
