Serves 3
1 c. washed uncooked wild rice
¼ tsp. salt
1 celery, diagonally sliced
2 scallions, diagonally sliced
4 dried apricots, finely chopped
2 tsp. toasted slivered almonds


  1. Place wild rice and enough water to cover the rice in a medium saucepan. Bring rice and water to a boil. Cover and reduce heat to a low simmer. Cook until rice is tender, about 1 hour. Add salt 10 minutes before the rice is done cooking. Add a little bit of additional boiling water as necessary if the cooking water has been absorbed. Remove pan from heat.
  2. Stir in celery, scallions and apricots. Garnish with almonds and serve.
