Fruity Wild Rice
Servings and Ingredients
|1 c. washed uncooked wild rice|
|¼ tsp. salt|
|1 celery, diagonally sliced|
|2 scallions, diagonally sliced|
|4 dried apricots, finely chopped|
|2 tsp. toasted slivered almonds|
- Place wild rice and enough water to cover the rice in a medium saucepan. Bring rice and water to a boil. Cover and reduce heat to a low simmer. Cook until rice is tender, about 1 hour. Add salt 10 minutes before the rice is done cooking. Add a little bit of additional boiling water as necessary if the cooking water has been absorbed. Remove pan from heat.
- Stir in celery, scallions and apricots. Garnish with almonds and serve.
