    Filling:
    4tart apples, peeled and cored
    3 tbsp.fresh lemon juice
    2 tbsp.coconut palm sugar
    1 tbsp.ground cinnamon
    Topping:
    1 c.rolled oats
    ¾ c.finely chopped walnuts
    c.maple syrup
    1 tbsp.coconut oil
    1 tsp.vanilla extract
    1 tsp.ground cinnamon
    ¼ tsp.sea salt

    Directions

    1. Preheat oven to 350 degrees.
    2. Slice apples and place in 9-inch-square baking dish.
    3. Sprinkle with lemon juice, sugar and cinnamon.
    4. Combine topping ingredients. Sprinkle over apples.
    5. Bake until apples are tender, about 35 minutes.
    6. Let stand 5 to 10 minutes before serving. Top with ice cream if desired.
