    2 tbsp. That’s Smart! all-purpose flour
    1 c. That’s Smart! beef broth
    ¼ c. That’s Smart! tomato ketchup
    4 c. That’s Smart! frozen mixed vegetables with carrots, corn, peas and green beans, thawed
    ¾ c. Hy-Vee light sour cream
    ½ c. Hy-Vee finely shredded mild Cheddar cheese, divided

    Directions

    1. Preheat oven to 375 degrees. Place potatoes and garlic cloves in a large saucepan. Fill saucepan with water to cover potatoes. Bring to a boil. Reduce heat to medium-low; simmer for 18 to 20 minutes or until fork-tender.

    2. Meanwhile, heat a large nonstick skillet over medium-high heat. Add ground beef. Cook for 6 to 8 minutes or until browned (165 degrees), stirring occasionally to break into small crumbles.

    3. Reduce heat to medium-low. Stir in flour, 1/2 tsp. salt and 1/4 tsp. pepper; cook for 30 to 60 seconds. Stir in broth and ketchup; cook for 1 to 2 minutes. Add mixed vegetables; cook for 1 to 2 minutes, stirring occasionally.

    4. Drain potatoes; return to saucepan. Add sour cream and 1/4 cup cheese; beat with an electric mixer on high for 1 to 2 minutes or until potatoes are creamy.

    5. Spray an 8-in. square baking dish with nonstick spray. Spoon meat mixture into prepared dish. Top with potatoes; spread evenly.

    6. Bake, uncovered, for 18 minutes. Top with remaining cheese. Bake for 3 to 4 minutes more or until cheese is melted and potatoes are lightly browned. Season to taste with additional salt and pepper, if desired.
