1 (12-oz.) pkg. That's Smart! frozen California mix with broccoli, cauliflower and carrots
1 (12-oz.) pkg. That's Smart! frozen sweet peas
1 c. That's Smart! 2% reduced-fat milk
½ c. That's Smart! small curd 4% milkfat cottage cheese
4 tsp. That's Smart! all-purpose flour
¼ tsp. That's Smart! garlic powder
½ c. Hy-Vee grated Parmesan cheese
Hy-Vee salt, to taste
That's Smart! ground black pepper, to taste

Directions

  1. Cook noodles in a large pot according to package directions, adding California mix and peas during the last 5 minutes of cooking. Drain; set aside and keep warm.

  2. Meanwhile, for sauce, combine milk, cottage cheese, flour, and garlic powder in a blender Cover and blend until smooth.

  3. Transfer the cottage cheese mixture to the same pot. Cook and stir over medium-high heat until thickened and bubbly. Cook and stir for 1 minute more. Stir in Parmesan cheese. Add noodles and vegetables; toss until well combined. Season to taste with salt and pepper.
