    1 (6-oz.) pkg. That’s Smart! chicken stuffing mix, divided
    ½ tsp. Hy-Vee salt
    ¼ tsp. That’s Smart! ground black pepper
    1 That’s Smart! large egg
    ¾ c. hot water
    3 tbsp. That’s Smart! salted sweet cream butter, cut up
    That’s Smart! frozen winter vegetable mix, steamed, for serving

    Directions

    1. Preheat oven to 400 degrees. Line a baking sheet with aluminum foil and spray with That’s Smart! nonstick cooking spray; set aside. Pound chicken breasts between two large pieces of plastic wrap until about 1/2-inch thick; set aside.

    2. Remove 1 cup of chicken stuffing mix from box and place in a resealable plastic bag; finely crush stuffing mix and pour onto a shallow dish; stir in salt and pepper. Place egg in another shallow dish. Dip one side of pounded chicken into egg mixture and then immediately into crushed stuffing mix; place breaded side down on prepared baking sheet.

    3. Place hot water, remaining stuffing mix, and cut up butter in a large microwave-safe bowl. Microwave on HIGH for 5 to 6 minutes or until heated thoroughly. Place even amounts of prepared stuffing on one lengthwise half of chicken. Fold chicken in half to cover stuffing and tuck in edges.

    4. Bake chicken 15 to 20 minutes or until internal temperature reaches 165 degrees. Remove from oven and allow to cool 5 minutes. Serve with steamed mixed vegetables, if desired.
