    1 ½ c. Hy-Vee white rice, dry, rinsed
    3 c. plus 1/4 c. water, divided
    Hy-Vee salt
    ½ (27-oz.) pkg. That's Smart! chicken breast strips
    2 tbsp. That's Smart! canola oil
    1 yellow onion, sliced
    3 clove(s) garlic, minced
    1 (12-oz.) pkg. That's Smart! mixed vegetables
    1 (1-oz.) Kikkoman seasoning stir-fry mix
    2 tbsp. That's Smart! honey
    Fresh cilantro, for garnish
    Lime wedges, for serving

    Things To Grab


      1. Preheat oven to 425 degrees. Add rice to a large stockpot. Fill with 3 cups of water and season with salt. Bring to a boil; cover, reduce heat. Cook 12 to 15 minutes or until tender. 

      2. Meanwhile, place chicken breast strips on a large baking sheet. Cook 11 to 13 minutes or until crispy and cooked through (165 degrees). Remove from oven; cut into bite-size pieces and set aside. 

      3. Heat canola oil in a large skillet over medium-high heat. Add onions and garlic, stir fry 2 to 3 minutes or until crisp-tender. Add frozen vegetables. Cook and stir 5 minutes or until cooked through. Add cooked chicken to skillet In a small bowl, whisk together stir-fry seasoning mix, remaining 1/4 cup water, and honey. Pour over mixture in skillet. Continue cooking and stirring 2 more minutes or until well coated. 

      4. Serve stir-fry over hot cooked white rice. If desired, garnish with fresh cilantro and serve with lime wedges.
