    1 whole fryer chicken, cut in pieces
    ½ c. honey
    ½ c. soy sauce
    ¼ c. dry sherry or water
    1 tsp. fresh grated ginger (or 2 tsp ground ginger)
    2 medium garlic cloves, crushed

    Directions

    1. Place chicken pieces in a plastic food storage bag or a large glass baking dish.
    2. Combine honey, soy sauce, sherry (or water), ginger and garlic in a small bowl. Pour over chicken, turning pieces to coat. Close plastic bag or cover dish with plastic wrap.
    3. Marinate in the refrigerator for at least 6 hours, turning chicken 2 or 3 times.
    4. Remove chicken from marinade, reserving marinade.
    5. Arrange chicken on a rack over a foil-coated broiler pan. Cover chicken with foil.
    6. Bake at 350 degrees for 30 minutes.
    7. Meanwhile, place reserved marinade in a saucepan. Bring marinade to a boil and boil for 3 minutes.
    8. Uncover chicken and brush with marinade. Continue to bake uncovered for 30 to 45 more minutes or until done, brushing chicken occasionally with marinade.
