    1 (1.2 pound) package ground turkey
    1 medium yellow onion, chopped
    1 (14.5 ounce) can Hy-Vee diced tomatoes with roasted garlic and onion
    Water, as needed
    1 c. Hy-Vee long-grain white rice
    1 (1.25 ounce) package Hy-Vee taco seasoning
    Hy-Vee shredded 2% milk cheddar cheese, optional
    Hy-Vee shredded lettuce, optional
    Chopped avocado, optional
    Hy-Vee sliced ripe olives, optional
    Hy-Vee green chilies, optional
    Hy-Vee nacho cheese tortilla chips, optional

    Directions

    1. Brown ground turkey and onion in a large skillet over medium-high heat. Drain and return to skillet.
    2. Drain tomatoes and reserve liquid. Add water to reserved tomato juice to equal 2-1/2 cups.
    3. Stir in tomatoes, tomato liquid, rice and taco seasoning. Cover and bring to a boil. Simmer for 25 minutes or until liquid is absorbed. Fluff with a fork before serving.
    4. If desired, serve with cheese, lettuce, avocado, olives, green chilies and tortilla chips.
