Speedy Ginger-Chicken Soup
Servings and Ingredients
|¾ c. Minute white rice, uncooked|
|4 tsp. minced gingerroot or 1 tsp ground ginger|
|1 c. Oscar Mayer oven roasted chicken breast cuts|
|2 c. mixed thinly sliced red pepper, carrot and green onion slices|
|2 c. chicken broth|
- Combine 3 tbsp rice and 1 tsp gingerroot in each of 4 microwavable soup bowls.
- Top each with 1/4 cup chicken and 1/2 cup of the vegetables; stir until well blended.
- Add 1/2 cup each broth and water to each bowl; cover with microwave-safe plastic wrap. Microwave on high 2 minutes. Let stand 5 minutes before serving.
