Cream of Onion Soup

1 c. chopped onion | ||
¼ c. thinly sliced green onion | ||
¼ c. all-purpose flour | ||
½ tsp. salt | ||
¼ tsp. pepper | ||
4 c. milk | ||
½ c. chicken broth | ||
1 ½ c. half-and-half or light cream | ||
croutons, optional, for garnish |
Directions
- In a 3-quart saucepan, melt butter or margarine. Add onions and green onions. Cover and cook over medium-low heat for 15 minutes, stirring occasionally until onions are very tender.
- Stir in flour, salt and pepper. Add milk and chicken broth. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more.
- Add half-and-half or cream. Cook and stir until heated through.
- Serve topped with croutons.
