    ¼ c. butter or margarine
    1 c. chopped onion
    ¼ c. thinly sliced green onion
    ¼ c. all-purpose flour
    ½ tsp. salt
    ¼ tsp. pepper
    4 c. milk
    ½ c. chicken broth
    1 ½ c. half-and-half or light cream
    croutons, optional, for garnish

    Directions

    1. In a 3-quart saucepan, melt butter or margarine. Add onions and green onions. Cover and cook over medium-low heat for 15 minutes, stirring occasionally until onions are very tender.
    2. Stir in flour, salt and pepper. Add milk and chicken broth. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more.
    3. Add half-and-half or cream. Cook and stir until heated through.
    4. Serve topped with croutons.
