    Servings and Ingredients

    Ingredients
    Serves 32
    QuantityIngredientAdd
    2 ½ c. soymilk
    2 tbsp. honey
    ¼ c. soy oil
    1 tbsp. active dry yeast
    ½ c. warm water
    ⅓ c. soy flour
    2 c. white bread flour
5 c. or more whole wheat flour
    2 ½ tsp. salt

    Directions

    1. Bring soymilk and honey almost to a boil in saucepan. Remove from heat. Stir in oil and let cool to lukewarm.
    2. Dissolve yeast in warm water and let sit about 5 minutes, until bubbles begin to form.
    3. Combine soy flour, white flour, 4 cups whole wheat flour and salt in large mixing bowl. Add yeast and soymilk mixtures and stir well.
    4. Add remaining whole wheat flour as needed to make a soft dough. Turn out onto a lightly floured board and knead until smooth and elastic, about 10 to 15 minutes.
    5. Put dough into lightly oiled bowl. Cover and let rise until double in bulk, about 2 hours.
    6. Punch dough down, shape into 2 loaves and let rise again in lightly oiled bread pans until dough reaches the top of the pan, about 45 minutes.
    7. Bake for 35 to 40 minutes at 350 degrees, until golden and bottom sounds hollow when tapped. Remove from pans to cool.
