    ¼ c. soy milk
    ½ c. oil, divided
    1 tbsp. maple syrup
    ½ tsp. vanilla extract
    additional oil, if necessary


    1. Place soy milk and 1/4 cup oil in a blender container. Blend at the highest speed. Slowly drizzle in the remaining 1/4 cup oil. Blend in maple syrup and vanilla. Add a little more oil if necessary to thicken.
    2. Chill and serve.
    3. NOTE: This recipe does not work well on damp, rainy days.
