Orange-Soy-Glazed Green Beans

1 tbsp. Hy-Vee Select olive oil | ||
1 large sweet onion, thinly sliced | ||
1 lbs. green beans, trimmed and cut in half | ||
¼ c. Hy-Vee orange marmalade | ||
1 tbsp. reduced-sodium soy sauce |
Directions
- Heat oil in large skillet over medium heat. Cook onions, stirring frequently, for 10 minutes or until onions begin to brown. Reduce heat to medium-low and continue cooking, stirring frequently, until onions are very soft and golden brown, about 10 minutes more.
- Meanwhile, cook green beans in boiling water until tender-crisp, about 4 minutes. Drain and plunge into ice water. Drain well and add to skillet when onions are finished cooking.
- Increase heat to medium and stir in marmalade and soy sauce. Heat through.
