1 (15 oz) can Hy-Vee no-salt-added black beans, drained
1 c. Hy-Vee roasted edamame salad (found in the Hy-Vee Kitchen cold case)
2 c. Hy-Vee frozen supersweet corn, thawed
1 (14.5 oz) can Hy-Vee salsa-style fire-roasted diced tomatoes with peppers, onion and garlic
¼ c. chopped parsley or cilantro
¼ c. low-fat Hy-Vee Italian salad dressing
Tortilla chips, optional

Directions

  1. Combine beans, edamame, corn and tomatoes in large bowl.
  2. Toss with parsley and dressing. Refrigerate until ready to serve.
  3. Serve with tortilla chips if desired.
