3 clementines, peeled, sectioned, seeded and chopped
½ red bell pepper, seeded and chopped
1 garlic clove, minced
1 tsp. seeded, chopped jalapeño*
½ medium cucumber, peeled, seeded and chopped
2 tbsp. fresh lime juice
Salt and pepper, to taste
Tortilla chips


  1. In a small bowl combine clementines, bell pepper, garlic, jalapeño, cucumber and lime juice. Season with salt and pepper to taste. Cover and chill 30 minutes. Let come to room temperature, and serve with tortilla chips.
  2. *Use caution when handling hot peppers. Wear disposable gloves or wash hands thoroughly in hot, soapy water afterward.
