6 Hy-Vee Smart russet potatoes | ||
1 c. Hy-Vee salsa, divided | ||
2 green onions, chopped | ||
Hy-Vee salt and Hy-Vee black pepper, to taste |
Directions
- Preheat oven to 400 degrees.
- Cut potatoes into wedges and toss with 1/3 cup salsa. Place on a greased baking sheet and bake for 40 minutes or until potatoes are tender, basting and stirring often with remaining salsa.
- Broil 3 minutes or until golden.
- Sprinkle with green onion, salt and pepper before serving.
