Rhubarb Crisp

5 c. chopped rhubarb | ||
1 ½ c. white sugar | ||

Directions
- Preheat oven to 350 degrees. Spray a 13-by-9-inch baking dish with nonstick cooking spray.
- Combine brown sugar, flour, oatmeal and cinnamon. Spread half in prepared pan. Top with rhubarb.
- In a saucepan, boil sugar and water until clear and thick. Add vanilla. Pour over rhubarb.
- Sprinkle remaining half of the oatmeal mixture on top.
- Bake for 45 to 50 minutes.
