    Serves 9
    ¾ c. flour
    ¼ c. soy flour
    2 tsp. baking powder
    ½ tsp. cinnamon
    ½ tsp. nutmeg
    ½ c. sugar
    ⅔ c. soy milk
    ¼ tsp. almond extract
    1 (16 oz) can sliced peaches, well-drained and cut into 1/2-inch pieces


    1. Preheat oven to 350 degrees.
    2. In medium bowl, combine flour, soy flour, baking powder, cinnamon, nutmeg and sugar. Stir together well.
    3. Add soy milk and almond extract. Stir just until blended. Gently stir in well-drained chopped peaches.
    4. Pour batter into 8-inch square baking pan coated with nonstick cooking spray.
    5. Bake at 350 degrees for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Cut into 9 squares to serve.
