3 c. fresh blueberries | ||
½ c. plus 3 tbsp Equal Sugar Lite, divided | ||
⅓ c. Hy-Vee orange juice | ||
⅔ c. Hy-Vee flour | ||
¼ tsp. Hy-Vee baking powder | ||
⅛ tsp. Hy-Vee salt | ||
1 tsp. Hy-Vee cinnamon | ||
½ c. light butter, softened | ||
1 Hy-Vee large egg | ||
½ tsp. Hy-Vee vanilla extract |
Directions
- Preheat oven to 325 degrees. In a greased 8-by-8-inch baking dish, stir together blueberries, 3 tablespoons Sugar Lite and orange juice.
- In a small bowl, stir together flour, baking powder, salt and cinnamon.
- In a medium bowl, cream butter and remaining 1/2 cup Sugar Lite until combined. Beat in egg and vanilla. Gradually stir in flour mixture. Pour mixture evenly over blueberries.
- Bake for 35 to 40 minutes or until topping is golden brown and filling is bubbling.
