    1 (8-oz.) pkg. mascarpone cheese
    1 tsp. maple extract
    ¼ c. powdered sugar, plus additional for dusting
    2 tbsp. Hy-Vee mini chocolate chips, plus additional for garnish
    12 slice(s) Hy-Vee sweet smoked bacon

    • Large piping bag or resealable plastic bag

    Directions

    1. Preheat Broiler to HIGH. Line a large baking sheet with aluminum foil; set aside.

    2. Place ricotta, mascarpone, maple extract, and powdered sugar in a medium bowl. Beat with an electric mixer for 2 to 3 minutes until combined. Stir in chocolate chips. Place mixture into a large piping bag or resealable plastic bag. Refrigerate until ready to serve.

    3. Make twelve 5x1-inch cylinders out of aluminum foil. Loosely wrap with 1 piece of bacon, overlapping slightly to prevent gaps. Place on prepared baking sheet and broil 12 to 15 minutes, flipping once halfway through baking.

    4. Remove bacon from oven and place onto paper towels; cool slightly. When cool enough to handle, carefully remove foil from center of bacon.

    5. Cut a large hole into piping bag. Fill bacon shells with ricotta filling. Just after filling, dip each end of the cannoli in mini chocolate chips and dust with powdered sugar, if desired.
