Herbed Egg Salad Sandwiches
Servings and Ingredients
|4 hard-boiled eggs, peeled and chopped|
|2 tbsp. low-fat or non-fat mayonnaise|
|2 tbsp. low-fat or non-fat sour cream|
|2 tbsp. minced fresh herbs, such as parsley, chives and/or tarragon|
|1 medium scallion, minced|
|2 tsp. fresh lemon juice, or to taste|
|1 tsp. Dijon mustard|
|freshly grated lemon zest|
|salt and pepper, to taste|
|8 slice(s) whole-grain bread|
- In a bowl, stir together eggs, mayonnaise, sour cream, herbs, scallion, lemon juice, mustard and lemon zest.
- Add salt and pepper to taste, and combine well.
- Make 4 sandwiches, using the 8 slices of bread, pressing together gently.
