    1 tsp. dried tarragon
    ¼ c. Hy-Vee light mayonnaise
    4 whole wheat pita pocket halves
    2 (5 oz each) cans Chicken of the Sea pink salmon, divided
    ½ cucumber, sliced and divided
    ½ large tomato, sliced and divided

    Directions

    1. In a small bowl, combine tarragon and mayonnaise. Lay out the pita pockets on a work surface and carefully open each one. Spread the inside of each half evenly with the mayonnaise spread.
    2. Stuff pockets with salmon, cucumbers and tomatoes.
