Grilled Shrimp and Pineapple Salsa
This simple salsa, served with crispy chips, is an irresistible yet healthy game-day snack that guests love.
Servings and Ingredients
|8 oz.||medium shrimp, peeled, deveined and rinsed|
|½ c.||chopped red onion|
|½ c.||chopped fresh pineapple|
|1||jalapeno pepper, finely chopped*|
|¼ c.||fresh lime juice|
|¼ c.||finely chopped cilantro|
|Kosher salt, to taste|
|Hy-Vee Select olive oil, optional|
|Tortilla or potato chips, for serving|
- Prepare a charcoal or gas grill for direct grilling over medium-high heat. Coat the inside of a grill basket with nonstick cooking spray.
- In prepared basket, grill shrimp for 4 minutes or until shrimp are opaque, turning once. Cool slightly. Chop shrimp; set aside.
- In a large bowl, combine red onion, pineapple, jalapeño, lime juice, cilantro and shrimp. Season with salt. If desired, drizzle with olive oil. Cover and chill at least 30 minutes or up to 1 day before serving. Serve with chips, if desired.
- *Note: Chile peppers contain volatile oils that can burn skin and eyes. When working with chile peppers, wear protective gloves.
