    2 c. frozen peas, thawed
    1 c. chopped fresh tomato
    ¾ c. chopped celery
    ¼ c. finely chopped onion
    ¼ c. fat-free Thousand Island dressing
    ¼ c. fat-free mayonnaise
    1 tbsp. fresh parsley or 1 tsp dried parsley flakes

    Directions

    1. In a medium bowl, combine peas, tomato, celery and onion.
    2. In a small bowl, combine Thousand Island dressing, mayonnaise and parsley.
    3. Add dressing mixture to vegetable mixture. Mix gently to combine.
    4. Cover and refrigerate for at least 20 minutes. Gently stir again just before serving.
