2 c. chopped fresh cauliflower
1 ½ c. frozen peas, thawed
¾ c. chopped celery
¼ c. chopped onion
½ c. fat-free mayonnaise
¼ c. fat-free ranch dressing
1 tsp. dried parsley flakes
Sugar substitute equal to 2 teaspoons sugar

Directions

  1. In a large bowl, combine cauliflower, peas, celery, and onion.
  2. In a small bowl, combine mayonnaise, ranch dressing, parsley flakes, and sugar substitute.
  3. Add dressing mixture to vegetable mixture. Mix gently to combine.
  4. Cover and refrigerate for at least 20 minutes. Gently stir again just before serving.
