Citrus Salad with Honey-Lime Dressing
Servings and Ingredients
|⅓ c.||Hy-Vee canola oil|
|¼ c.||Hy-Vee honey|
|4 tsp.||grated lime peel (2 limes)|
|6 tbsp.||lime juice (3 limes)|
|1 ½ lbs.||jicama, washed, peeled and cut into matchsticks (about 4 cups)|
|1||(6 ounce) package radishes, washed, halved and thinly sliced|
|¼ c.||chopped fresh cilantro, optional|
- In a large bowl, combine oil, honey, lime peel and lime juice. Stir well.
- Cut peel from oranges. With a small paring knife, section oranges over bowl with oil mixture, letting juice and sections fall into bowl.
- Add jicama and radishes to orange sections in bowl; toss to combine. Cover and refrigerate 30 minutes.
- Season with salt and pepper to taste, top with chopped cilantro and serve.
