⅓ c. Hy-Vee canola oil
¼ c. Hy-Vee honey
4 tsp. grated lime peel (2 limes)
6 tbsp. lime juice (3 limes)
4 oranges
1 ½ lbs. jicama, washed, peeled and cut into matchsticks (about 4 cups)
1 (6 ounce) package radishes, washed, halved and thinly sliced
¼ c. chopped fresh cilantro, optional

Directions

  1. In a large bowl, combine oil, honey, lime peel and lime juice. Stir well.
  2. Cut peel from oranges. With a small paring knife, section oranges over bowl with oil mixture, letting juice and sections fall into bowl.
  3. Add jicama and radishes to orange sections in bowl; toss to combine. Cover and refrigerate 30 minutes.
  4. Season with salt and pepper to taste, top with chopped cilantro and serve.
