    ½ c. Hy-Vee dried cranberries
    ½ c. Kraft crumbled blue cheese
    1 c. Hy-Vee seasoned croutons
    Light Citrus Dressing
    6 tbsp. orange juice, freshly squeezed
    ¼ c. Gustare Vita extra virgin olive oil
    2 tbsp. Hy-Vee apple cider vinegar
    1 tbsp. Hy-Vee honey
    1 tsp. Hy-Vee kosher sea salt
    1 tsp. Hy-Vee freshly ground pepper

    Directions

    1. Place 1 tablespoon olive oil in a large skillet over medium heat. Add chopped prosciutto and cook for 4 to 5 minutes, or until crisp. Remove prosciutto from skillet and place on a paper towel lined plate; set aside.

    2. Place greens in a large bowl. Top with apples, almonds, cranberries, blue cheese, crispy prosciutto, and croutons.

    3. Make Light Citrus Dressing: In a small bowl, mix together orange juice, olive oil, apple cider vinegar, honey, salt, and ground pepper.

    4. Just before serving, toss salad with desired amount of Light Citrus Dressing.
