    1 c. Hy-Vee refrigerated egg substitute
    4 slice(s) organic pepper-Jack soy cheese
    6 (6-inch) high fiber tortilla shells
    ½ red bell pepper, cut into strips
    ½ green bell pepper, cut into strips
    1 c. Hy-Vee salsa

    Directions

    1. In a medium skillet, cook egg substitute over medium heat for 3 to 5 minutes, or until mixture is thickened throughout but still moist.
    2. Place cheese on top of warm eggs.
    3. Place red and green bell peppers on each tortilla.
    4. Spoon egg mixture over the center of each tortilla.
    5. Drizzle with salsa.
    6. Roll up tortillas.
