    1 sumo mandarin, cut into 8 1/4-inch-thick slices
    1 ½ c. water
    1 c. Hy-Vee granulated sugar
    ½ c. dark chocolate melting wafers, melted

    Directions

    1. Preheat oven to 200 degrees. Place a wire rack sprayed with nonstick spray in a rimmed baking pan. Combine water and sugar in a skillet. Bring to a simmer over medium heat. Add orange slices. Simmer, uncovered, 10 to 15 minutes or until flesh turns translucent and syrup thickens. Remove orange slices from syrup. Reserve syrup for another use. 

    2. Arrange orange slices on prepared rack. Bake 3 hours, or until dried, turning slices every hour. Remove from oven and cool on rack until crisp.

    3. Once completely cool, dip slices into melted chocolate. Let stand until chocolate is set. Store slices in an airtight container for up to 1 week.
