Bulgar and Flax Pilaf

    Serves 5
    2 tbsp. butter or margarine
    1 c. bulgar wheat
    ¼ c. flax seed
    ⅓ c. minced onion
    1 small tomato, diced
    2 c. chicken broth
    ½ tsp. salt
    ¼ tsp. crushed rosemary OR 1 tsp fresh chopped rosemary or herb of your choice


    1. In a medium saucepan, melt butter over medium heat. Add bulgar wheat, flax seed and onion. Stir until bulgar is golden brown and flax is turning dark, about 3 minutes.
    2. Stir in tomato, chicken broth, salt and rosemary. Cover pan and heat to boiling. Reduce heat and simmer 15 minutes.
    3. Turn off heat, remove lid and fluff pilaf with a fork.
    4. Let rest 10 minutes before serving.
