1(10.5 oz) pkg silken tofu
½ c.water
¼ tsp.salt
¼ tsp.pepper
¼ tsp.garlic powder
½ tsp.Italian seasoning
1 tbsp.dried parsley
3 c.cooked tiny pasta, such as alphabets, orzo, etc.
½ c.finely diced onion

Directions

  1. Puree silken tofu, water, salt, pepper and garlic powder in blender until smooth.
  2. Add Italian seasoning and dried parsley and whirl just to mix.
  3. Put pasta and onion in medium mixing bowl. Pour tofu mixture over and stir to coat the pasta.
  4. Place pasta mixture in large nonstick skillet and cook over medium heat for 4 to 5 minutes, until the bottom of pasta is starting to brown.
  5. Stir with a spatula. Cook 4 to 5 minutes longer, stirring frequently, until pasta pieces are golden and separate from each other. Serve at once.
