    1. Place 1 pasteurized egg yolk, 2 teaspoons garlic paste, and 1 teaspoon lemon juice in a bowl. Beat on medium speed with an electric hand mixer until well combined.

    2. Pour 1 cup Gustare Vita olive oil into a glass measuring cup. With mixer running on medium-high, add 4 teaspoons olive oil, 1 teaspoon at a time. Continue beating on medium-high while slowly adding remaining oil in a very thin steady stream.

    3. Aioli should be smooth, yet thick enough to hold a cut edge. Stir in a small amount of water (about 2 teaspoons) for a thinner consistency, if desired. Season to taste with salt, pepper, and desired flavorings.
