Tomato Jam for Burgers (Get Cooking)

3 tbsp. butter | ||
2 large shallots, chopped | ||
2 c. cherry tomatoes | ||
1 c. brown sugar | ||
1 c. granulated sugar | ||
1 ¾ c. white wine vinegar | ||
¾ c. water | ||
Sea salt and pepper, to taste | ||
1 tsp. fresh thyme leaves |
Directions
- Melt butter in a 2-quart saucepan. Add shallots and sauté for 1 to 2 minutes.
- Add tomatoes, brown and granulated sugars, vinegar and water. Season with salt and pepper. Bring to a boil. Simmer for 8 to 10 minutes or until thick and syrupy.
- Stir in thyme and allow to cool. Season to taste with salt and pepper.
- Serve on top of your favorite grilled burger or with a charcuterie plate.
