Tomato Jam for Burgers (Get Cooking)

3 tbsp. butter
2 large shallots, chopped
2 c. cherry tomatoes
1 c. brown sugar
1 c. granulated sugar
1 ¾ c. white wine vinegar
¾ c. water
Sea salt and pepper, to taste
1 tsp. fresh thyme leaves

Directions

  1. Melt butter in a 2-quart saucepan. Add shallots and sauté for 1 to 2 minutes.
  2. Add tomatoes, brown and granulated sugars, vinegar and water. Season with salt and pepper. Bring to a boil. Simmer for 8 to 10 minutes or until thick and syrupy.
  3. Stir in thyme and allow to cool. Season to taste with salt and pepper.
  4. Serve on top of your favorite grilled burger or with a charcuterie plate.
