2 medium fresh tomatoes (3/4 pound), seeded and diced
1 c. Hy-Vee Select white shoepeg corn kernels
½ c. diced green pepper
⅓ c. diced red onion
2 ½ tbsp. Hy-Vee Select white wine vinegar
2 tbsp. sugar
1 tbsp. Dijon-style mustard
¼ tsp. red pepper flakes
⅛ tsp. salt


  1. In a medium bowl, combine tomatoes, white corn, green pepper and red onion.
  2. In a small bowl, combine white wine vinegar, sugar, Dijon mustard, red pepper flakes and salt.
  3. Pour vinegar mixture over vegetables. Toss to coat.
  4. Serve chilled with tortilla chips, or on hamburgers and hot dogs.
