1avocado, cut into 1/2-inch cubes
1 pt.cherry tomatoes, halved
½ c.finely diced red onion
Dressing:
2 tbsp.olive oil
½ tsp.grated lime zest
1 tbsp.fresh lime juice
¼ c.chopped cilantro
¼ tsp.salt
¼ tsp.pepper

Directions

  1. Combine the corn, avocado, tomatoes and onion in a large glass bowl.
  2. Mix together the dressing ingredients in another bowl.
  3. Pour the dressing over the salad, and gently toss to mix.
